I used this simple coulis as a garnish to my Key-Lime Cheesecake.
Strawberry-Lime Coulis
2 cups fresh strawberries, sliced
1 lime, zest and juice
1/2 cup granulated sugar
1 - Blend everything except the zest together until smooth.
2- Press the mixture through a fine mesh sieve with the back of a spoon to get rid of all the seeds. Stir in the zest of one lime.
3 - Serve fresh or chilled. Keep covered in refrigerator.
